Unlike the live stations of the Collection, Gastroplating is a seated tasting. Guests do not move — the world does. Each of the twelve courses arrives in sequence, plated to Michelin standard, drawn from a different corner of the culinary map and finished, whenever possible, in front of the guest.

The art of plating.

A Gastroplating plate is designed like an architectural drawing — negative space, weight, colour, sequence of taste. Nothing is placed for decoration; every element is a note in the flavour progression.

  • Handmade Japanese ceramic, warmed or chilled to the course.
  • Sauce painted, poured or dropped — never smeared.
  • One line of tension per plate — height, colour, or aroma.
  • Garnish is edible. Always. Never composed for the photograph alone.
